Study Abroad in Tuscany

Study Italian Cuisine at SIAF (The Learning Village in Tuscany) in Volterra, a historic hilltop town in the Tuscany region of Italy this summer. You will learn from Italian Professionals in their kitchens, their agritourismos, their restaurants and their wineries.  The campus was built in 2006 and tailors programs specific to the needs of the institutions.  For information regarding the campus please visit:

You will earn three credits for CUA 175 – Italian Cuisine over a two and a half week period.  This course introduces students to the building blocks of classical Italian Cuisine and the ingredients, methods, pasta making, cheese making, wine making, tourism as it relates to food (trekking/BBQ), meat, seafood, and olive oil.  In addition, students will gain an understanding of agriculture in agritourismos, sustainable processing methods and the processes used in harvesting seafood. Arranged by the CMC Restaurant & Culinary Management and Resort Management Programs.

Program Fees: $4,500*photo - Pasta and wine meal in Tuscany

Fees include:

  • Transportation to/from the airport (Pisa or Florence) to the campus in Tuscany
  • All meals on campus (meals traveling to/from Volterra and any free weekend travel are not included)
  • Campus housing
  • Travel insurance for the duration of the course and course planned activities

Additional Information: Students must be a declared major in either Hospitality Management or Restaurant & Culinary Management at the Steamboat Springs Campus.  This is a program extension for students enrolled in those two programs.
