Open registration begins Dec. 1 for spring classes at Colorado Mountain College. Many classes, including those taught via online learning, start the week of Jan. 12. Other classes start throughout the semester.

Credit class schedules for the Carbondale, Glenwood Springs and Spring Valley locations are available at college centers at 690 Colorado Ave. in Carbondale, 1402 Blake Ave. in Glenwood Springs, or 3000 County Road 114 in Spring Valley (south of Glenwood Springs). Information about select bachelor’s degrees is online at coloradomtn.edu/4year. Continuing education schedules for these three valley locations have been mailed out locally.

You can also browse online for all classes at coloradomtn.edu/classes.

Students new to the college can apply online or where they wish to attend. New degree-seeking students are encouraged to see a counselor before registering.

Returning students who have not taken classes within the past 12 months, and who wish to take credit classes, need to re-apply. They can register in person or online. Registration forms can be faxed or mailed. Current students who have taken classes within the past 12 months can register by mail, phone or fax, or online.

Sopris Theatre Company (formerly CMC Theatre) gives you a peek behind the curtain when it presents “The Glorious Ones,” a fun and bawdy musical that follows a 16th century Commedia dell’arte troupe backstage, onstage and offstage during the Italian Renaissance.

Colorado Mountain College adjunct instructor Brad Moore directs seven archetypal characters to carouse and cavort their way through this rousing performance. Silly and utterly comedic one moment, surprisingly tender and moving the next, the performance involves CMC students, theater professionals and community members to create entertaining and provocative dramatic fare for adult audiences.

The musical features book and lyrics by Lynn Ahrens and music by Stephen Flaherty. Producers for this performance are Carrie and Jeff Hauser; associate producers are Jim and Kelly Cleaver. Season producers are Jim and Connie Calaway.

Looking for ways to spice up your holiday treats this year and keep yourself and loved ones on a healthy track? In this class, we will explore alternative flours for baking such as almond and coconut flour, as well as healthier sweetener options and other simple substitutions. We’ll cover how to upgrade tried and true family recipes and we’ll make a few delicious and healthy treats. All the recipes made in class are gluten-free, dairy-free and grain-free with options for meeting other dietary needs.Heather Pratt is a Master Nutrition Therapist and has been helping individuals and groups make healthy eating a way of life for the past seven years. She taught for the Nutrition Therapy Institute’s Natural Food Chef Program for the past five years and has worked with 100s of clients over the years teaching healthy eating habits. She currently is the Nutrition Writer for Natural Grocers by Vitamin Cottage and sees clients in her office in Carbondale. Food and healthy living are her passions and she loves sharing them with others.
