AAS Degree in Sustainable Cuisine (64 credit hours) explores all aspects of food from farm to fork including:
- Basic and Advanced Cooking Skills
- Foodservice Management
- Concepts of Sustainability
- Introduction to Environmental Science
- Agroecology
- Food Politics and Policies
- Integrating Sustainability into Foodservice
Sustainable Cuisine Operations I (certificate, 21 credit hours) focuses on the kitchen:
- Basic Cooking Skills
- Concepts of Sustainable Cuisine
- Integrating Sustainability into Foodservice Operations
Sustainable Cuisine Operations II (certificate, 5 credit hours) is designed for active culinary professionals:
- Concepts of Sustainable Cuisine
- Integrating Sustainability into Foodservice Operations
Sustainable Food Systems (certificate, 15 credit hours) emphasizes growing foods:
- Concepts of Sustainability
- Introduction to Environmental Science
- Agroecology
- Food Politics and Policies

Work experience is not required for the Sustainable Cuisine Program (except the Internship for the AAS degree). There are, however, numerous jobs available in restaurants throughout Vail Valley.
Many of the Sustainable Cuisine courses coincide with the Associate of Applied Science in Culinary Arts and may be applied toward that degree as well.
