Mediterranean Culture of Food & Hospitality
We will begin our journey in the historic Tuscan hilltop town of Volterra, Italy with a food and wine focused course, CUA 246 Tuscan Culture and Cuisine. Here we study and visit producers of pasta/grains, wine, olive oil, cheese, agritourismos, and restaurants.
All producers operate with either biodynamic or organic practices and make interesting case studies for Americans looking to study production. As the majority of the Italian economy is based on tourism, there is much to learn from the area and the SIAF campus will house, feed, and transport us to our daily activities.
To further study other areas of culinary and hospitality in the Mediterranean, we will board the Celebrity Infinity at the Venice, Italy port and explore the industry in Split, Croatia, Dubrovnik, Croatia, Corfu, Greece, Naples, Italy, and we will disembark at the port in Civitavecchia, Rome.
Each day a presentation by one of the ships leaders will provide students with a global leadership perspective with special insight to the hospitality industry.
Trip Dates: June 7 – 21, 2020
Courses: CUA 246 Tuscan Culture & Cuisine and CUA 175 Special Topics: Lead at Sea (for credit courses) or CUA 901 for non-credit course option.
Tuition: See current in-district, in-state, and out-of-state CMC Tuition Rates
Program Fee: $3,800 – plus airfare and CMC tuition for credit course, $4,040 for non-credit course option – plus airfare. Estimated cost which could be reduced with fundraising or scholarship opportunities.
