CMC Spring Valley's Sodexo team competes with their 'student-loved pozole' at Aspen's Wintersköl carnival's soup competition

Jan. 12, 2024 - Aspen’s “toast to winter” will be sure to keep guests warm with beer and soup at its annual Wintersköl celebration.

... New contenders from restaurants outside of Aspen like Hominy Southern Kitchen and even Colorado Mountain College’s cafeteria and catering company Sodexo were able to put their soup in the ring.

Sodexo at Colorado Mountain College Spring Valley campus will be featuring their student-loved pozole with pork from the Nieslanik Farm. The Neislanik family donated land to the Springs Valley campus years ago, and now the cafeteria and the farm have an exchange where they receive their meat from the farm and donate their food scraps to the animals to prevent food waste in the local landfills.

“It's kind of a full circle story that we're hoping to tell,” Sodexo General Manager at the Spring Valley campus Brian Martin said.

The pozole recipe Sodexo entered into Soupsköl comes from one of the cooks on campus named Martina, according to Martin.

“Every time she makes it, the kids just go crazy,” Martin said. “If college students like the pozole, like we thought it might be a crowd pleaser.”
